Colina Cuervo is an all-day-café offering the Latin-American based food that owner Jorge Salamea grew up with.  Originally from Ecuador, Jorge came to Brooklyn over 20 years ago and fell in love with NYC. It was his home now. Jorge worked his way up in the restaurant world from washing dishes to line cook, eventually moving to the front of the house and becoming a manager at Annisa, Momofuku’s Noodle Bar, Ssam Bar and Ma Peche. He co-opened Anita Lo’s Bar Q as General Manager, which earned a 2 star review from the New York Times, and worked as Director of Operations for a small restaurant group in Carroll Gardens, Brooklyn

Colina Cuervo is a combination of Jorge’s love of good food, his Ecuadorian roots, and Brooklyn, where he lives with his wife London and their three kids Lukas, Mariella and Matias.
