Colina Cuervo is a coffee bar and café offering the Latin-American based food that owner Jorge Salamea grew up with.  Originally from Ecuador, Jorge came to Brooklyn twenty years ago and worked his way up in the restaurant world from dishwasher to line cook, eventually moving to the front of the house and becoming a manager at Annisa, Momofuku’s Noodle Bar, Ssam Bar and Ma Peche. He co-opened Anita Lo’s Bar Q as General Manager, which earned a 2 star review from the New York Times, and worked as Operations Director at Seersucker and Smith Canteen, opening Nightingale 9 in Carroll Gardens. Colina Cuervo is a combination of Jorge’s love of good food, his Ecuadorian roots, and Brooklyn, where he lives with his wife London and their son Lukas.
